Eggplant Parmesan

This was my first “Gourmet Recipe” at age 15, quite fitting because the recipe is from the Teens Cook.

Serves 4

1 Egg
1/2 Flour
1 teaspoon Salt
1/2 teaspoon pepper
1 Lg. eggplant
1/4 C olive oil
Salt and Pepper
1 1/2 C Parmesan

-Pre-heat oven to 350. While it heats beat the egg in a small bowl and set aside. In another bowl stir flour, salt, and pepper together. Place bread crumbs in another bowl.

– Cut the eggplant in slices approx. 1/4 in.

-Heat 2T olive oil in lg. pan at med-high heat. Dip both sides of eggplant in the flour, then in egg and then bread crumbs. Carefully place the slice in the heated pan and repeat with remaining eggplant slices. Cook 3-4 min each side or until golden brown.

-Place cooked eggplant on a baking sheet season with salt and pepper. Spread spaghetti sauce on each side and sprinkle with cheese. Bake for 10 min or until golden brown.
