Girls Night Pizza

Tonight was a much needed girl night (for Lindsay…I have nothing to stress me out, yet) She commutes to and from a Portland internship AND works a job. The only thing we could turn to was homemade pizza. Lacking yeast, the next best thing of course is beer!

We used this Beer Pizza Crust Recipe.
– I substituted half the white flour for whole wheat.

We topped our pizza with caramelized onions, roasted bell peppers, roasted eggplant and cheddar and parmesan.

What to do with leftover roasted eggplant??!!

Make a spread of course!
– The leftover eggplant was thrown in the food processor along with some onion and bell peppers, olive oil, cayene pepper and garlic cloves.
Less than 5 minutes pass and we had our movie snack. Perfecto!

We used this recipe as a guide and we use that term loosely.
