Bring on the [Cake] and Feel Good Friday

I am finally going to share the carrot cake recipe we used on my dad’s birthday! Essentially it is from the Food Network, but we omitted a few items and had some substitutions here and there.

What you need:

A Kitchen Aid (or hand held blender)

For the cake:
2 C granulated sugar
2 C Pastry Flour
1.5 C Vegetable Oil (I would use 1 cup or substitute applesauce next time)
4 eggs
2 t Baking soda
2 t Cinnamon
1 t Salt
3 C Shredded Carrots
Orange Zest to taste

For the frosting:
8 oz cream cheese
3 3/4 C Powdered Sugar
1/2 t Orange Zest
1 stick Butter
1 t Vanilla

Directions:

In a mixing bowl, mix sugar, vegetable oil, and eggs. In another bowl, sift together flour, baking soda, salt, and cinnamon,orange zest. Fold dry ingredients into wet mixture and blend well. Fold in carrots and chopped nuts golden raisins until well blended.

Before pouring in the pan make sure to grease and flour the entire bunt pan thoroughly. Pour the mixture in the pan and cook for 50-60 minutes.

For the frosting: Use room temperature butter and cream cheese. Combine all ingredients in kitchen aid and blend until well combine.

After 50 minutes: Check to see if  baked through and then flip bunt onto plate and leave to rest. (We left it in the pan overnight).
We had tons of frosting leftover! The cake is very moist and sweet enough that it hardly needs anything for a topping. The subtle orange flavoring in the frosting is a nice touch, but if you aren’t a frosting fan this is the perfect cake for you!

Feel Good Friday!
Although its been a busy week with class there was time this week for fun! We had fun Taboo game going one evening with the girls and another evening of Quelf with some guys. If you have never played Quelf it’s like Cranium, but with stuntz (touch the elbow of  each person and put your head on someone’s shoulder), roolz (stand say Pizza Party whenever the phone rings), quizzes  and other crazy rules. It gets everyone out of their comfort zone and is a really active board game. Look it up! It’s hard to explain, but the website does a good job.

Apparently you can play it online too, but you must connect to Facebook. Facebook really is taking over the internet.

Friday is the start of the weekend!  This means a BBQ and volleyball Saturday for me!
